Ingredients

  • Egg Yolks6 Unit
  • Sugar1 Cup
  • Heavy Cream1 Cup
  • Mascarpone Cheese1 Cup
  • Strong Brewed Coffee1 Cup
  • Coffee Liquer1 Cup
  • Ladyfingers Savoiardi Biscuits2 Unit
  • Cocoa Powder1 Gram

Steps

  1. 1.

In a heatproof bowl, whisk together the egg yolks and sugar until well combined. Place the bowl over a pot of simmering water (double boiler method). Continue whisking constantly until the mixture becomes thick and pale, about 5-8 minutes. The sugar should dissolve completely. Remove the bowl from the heat and let it cool slightly.

  2. 2.

In a separate bowl, beat the heavy cream to stiff peaks using an electric mixer.

  3. 3.

Gently fold the mascarpone cheese into the egg yolk mixture until smooth and well incorporated. Carefully fold the whipped cream into the mascarpone mixture until fully combined. Be gentle to keep the mixture light and airy.

  4. 4.

In a shallow dish, mix the cooled coffee with the coffee liqueur (if using).

  5. 5.

Dip each ladyfinger into the coffee mixture for about 1-2 seconds. Make sure they are soaked but not too soggy. Arrange a layer of soaked ladyfingers in the bottom of a 9x13 inch dish or a similarly sized serving dish. Spread half of the mascarpone filling evenly over the layer of ladyfingers. Repeat the process with another layer of soaked ladyfingers. Spread the remaining mascarpone filling over the second layer of ladyfingers.

  6. 6.

Cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight. This allows the flavors to meld and the dessert to set properly.

  7. 7.

Before serving, dust the top of the tiramisu generously with unsweetened cocoa powder. Optionally, garnish with dark chocolate shavings or grated chocolate for extra indulgence.
