In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
In a separate bowl, whisk together the buttermilk, eggs, melted butter, and vanilla extract until smooth.
Pour the wet ingredients into the bowl with the dry ingredients. Gently stir the mixture with a spatula or wooden spoon until just combined. Be careful not to overmix; it’s okay if there are a few lumps.
Preheat a griddle or large non-stick skillet over medium heat. Lightly grease the surface with butter or a non-stick cooking spray.
Pour ¼ cup of batter onto the griddle for each pancake. Spread the batter out slightly with the back of a spoon if necessary. Cook until bubbles form on the surface of the pancake and the edges look set, about 2-3 minutes. Flip the pancake and cook until the other side is golden brown, about 1-2 minutes more. Adjust the heat as needed to ensure the pancakes cook evenly without burning.
Transfer the cooked pancakes to a plate and keep warm. Repeat with the remaining batter, greasing the griddle as needed.
